Joyce Chen by Columbian Home Products In 1949 Joyce Chen came to America from Shanghai, China and settled in Cambridge, Massachusetts. Her culinary career began when she brought egg rolls to her children's school bake sale -- they sold out immediately. She had discovered America's growing interest in Chinese food. She soon began teaching lessons at her home and, later, at Cambridge's and Boston's Adult Education Centers. With the encouragement of friends and neighbors, she opened The Joyce Chen Restaurant in 1958. She also wrote her first Joyce Chen Cook Book in 1964, and in 1968 starred in her own national televised PBS cooking series called Joyce Chen Cooks. In the '70s, she found that the selection and quality of Chinese cookware in America didn't live up to her high standards, so she developed her own line of cookware with the slogan "Eastern Cookware for the Western Kitchen." Features:  How to use: 1: Clean and dry the wok: Prepare a piece of fat pork, about 300-400 grams. Clean the new iron wok with water, preferably hot water, and then put it on the stove and dry it with medium or small fire.  2: Evenly oil the pan: Put the fat pork into the wok, and then continuously smear the inside of the pot with pork, so that the spilled oil evenly covers the whole wok. With constant wiping, more and more oil is spilled from the pan, and the pork will turn black and small. This process takes 5 minutes. Remove the wok from the stove, dry the wok with paper or cloth, and repeat steps.  3: Repeat oil twice: If the surface of fat pork becomes hard, you can cut off the hard part with a knife, and then continue to put it into the wok. After each use, the inside of the wok will become bright and clean. Repeat 3-4 times. Rinse and dry the wok. Then use kitchen paper with a little of vegetable oil to wipe the wok evenly. Now the seasoning is completed.  4: Fully absorb the oil: The seasoning is completed. Just clean it.
